Two different macerations are carried out and then blended. The first takes place in the press, with soft, low-temperature pressing that ensures aroma and delicacy; the second, in tank, known as “salasso” (bleeding), gives greater structure. The pressures applied are extremely soft and gentle, allowing extraction of the free-run juice. Fermentation takes place in stainless steel tanks at low temperatures to enhance the wine's aromas and finesse.
