TECHNICAL NOTES
The finest Corvina (90%) and Rondinella (10%) grapes are selected and hand-picked in the vineyard. Once at the winery, the grapes are chilled overnight in a cold room, then destemmed and transferred to a temperature-controlled stainless steel tank. After about 6 hours the free-run pink must is drawn off, with a must yield of 25%. The pink must is then cold-settled and moved to a concrete tank for spontaneous fermentation, kept at 18°C. After fermentation the wine rests in concrete tanks on its fine lees, which are periodically kept in suspension by batonnage. Bottling, without any filtration, takes place in June.

TASTING NOTES
A pale pink colour with light copper hues that develop as the wine ages in bottle. The slight haze visible when the bottle is shaken comes from the fermentation yeast resting inside. On the nose, fruity notes of plum, yellow peach and apricot stand out; with time they give way to hints of candied orange and saffron. On the palate the fresh acidity is lively and clearly perceptible. The finish is savoury, elegant and long.

FOOD PAIRING
Its versatility makes this wine an excellent partner for fish and seafood dishes. It also pairs perfectly with aged cheeses.
